Meet our Campus Dietitian - Dr. Kelly Martin DCM, RDN, CDN. Kelly is here to help you lead the healthiest, happiest life possible here on campus. She are available for private consultations and can provide guidance and support on a wide range of topics. From weight management and vegan diets to fitness and anything in between, Kelly will work with you to find the most effective approach for your unique body and lifestyle. Together, you will develop personalized wellness plans to help you reach your goals and best utilize the resources available to you here on campus. Also, look out for upcoming nutrition and wellness related dining room events and programs!

Food Allergies
We take pride in sourcing wholesome ingredients, preparing recipes accurately and providing nutritional analysis and ingredient statements through our online menus and nutrition calculator. We are all passionate about serving students. From general manager to front line servers, we work diligently to address students’ specific needs, especially those with food allergies, Celiac disease, or special dietary needs. A team approach led by you, our educated consumer, is the best preparation for a safe school year free of allergic reactions. We want to meet one-on-one with all of our customers who have individual dining needs to ensure that your dining experience is safe, delicious, and social.
Simple Servings
Simple Servings is our allergen-safe, dining option for our customers with food allergies or gluten intolerance. This station is located in Wilsbach Dining Hall and offers food free from peanuts, tree nuts, shellfish, wheat, soy, milk products, eggs, sesame, and gluten. Simple Servings staff members are carefully trained to avoid cross-contact with food allergens.
Mindful
Locate a healthier choice! All Mindful offerings meet stringent nutritional criteria based on the Dietary Guidelines for Americans. Each Mindful item is limited in calories, has fewer than 30% of calories from fat, fewer than 10% of calories from saturated fat, and is restricted in sodium and cholesterol. Vegetarian
Menu items with the vegetarian icon contain no meat, fish or poultry, or any meat products such as soup base. Our vegetarian offerings meet the needs of lacto-ovo vegetarians and may include eggs and/or dairy products.
Vegan
Vegan offerings contain no meat, fish, eggs, milk or other animal-derived products such as honey.
